No soap or hot water at hand wash sink, Pizza John’s in Carlisle hit with 12 violations in state violations

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on October 3, 2019.  As a result of that inspection, and due to the severity of the specific violations the Pizza John’s in Carlisle was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations.  The restaurant was cited for 12 violations.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed in-use knives stored between the edges of the cooler units, an area not easily cleanable & sanitized.
  • Soap is not available at the hand wash sink in the kitchen.
  • Hot water is not working at the hand wash sink in the kitchen.
  • Deli slicer has an accumulation of dried food residue.
  • The Person in Charge does not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Observed a missing light shield in the back of the kitchen.
  • Dry breading used for chicken is not being date-marked.
  • Food employee observed preparing food, not wearing a proper hair restraint.
  • Observed a bottle of medicine stored above the food prep area.
  • Raw chicken was stored above ready to eat foods (cheese, rice and vegetables) in the walk-in cooler.
  • Observed an accumulation of static dust in the fan guard in the walk-in cooler.
  • Toilet Room door was propped open, and not kept closed as required.
