Build up of crud inside ice machine, Empire Asian Bistro hit with 8 inspections violations

Susquehanna Township conducted an unannounced retail food inspection on October 31, 2019. As a result of that inspection, and due to the severity of the specific violations the Empire Asian Bistro was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed build up of crud on inside of ice machine.
  • Table-top mounted can opener, a food contact surface, was observed to have food residue and was not clean to sight and touch.
  • Observed no chemical sanitizer being used on food contact surfaces, equipment and utensils prior to opening their facility and throughout the day. Quaternary sanitizer on site but not being used to sanitize the food contact surfaces such as cutting boards and counter tops.
  • Non-compliant temperature in cold holding unit with condiment/toppings. Manager adjusted thermostat but unit did not respond appropriately to lower temperature while inspector was on-site. *
  • Cleaned and sanitized utensils located in prep area, are stored with food contact surfaces / food or lip area exposed to hand contact when retrieved by food employees.
  • Observed several bulk food ingredient containers, in the food preparation area, being stored directly on the floor rather than 6 inches off the floor as required by the food code.
  • Paper towel dispenser empty at the hand wash sink in the kitchen area located along wall.
  • Observed several food containers, in the walk in freezer, being stored directly on the floor rather than 6 inches off the floor as required by the food code.
  • Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Overall condition of kitchen and food prep area is untidy with food debris on floor areas.

 

* The temperature danger zone is food temperatures between 41 and 135 degrees Fahrenheit and the most rapid bacteria growth occurs between 70 and 125 degrees Fahrenheit. The longer food sits in this temperature range, the greater the risk that bacteria will begin to grow on food.
