Slicer not clean, has food residue, White Haven Family Diner fouls state food inspection with 8 violations

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on October 24, 2019. As a result of that inspection, and due to the severity of the specific violations the White Haven Family Diner in Luzerne County was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Person in charge is not monitoring risk factors closely enough related to number of risk factors.
  • Food employees observed in kitchen prep area, not wearing proper hair restraints, such as nets or hats.
  • Ice machine, a food contact surface, was observed to have slight dirt residue and was not clean to sight and touch. Machine was cleaned and sanitized during this inspection.
  • Slicer in rear kitchen, a food contact surface, was observed to have food residue and was not clean to sight and touch. Slicer was cleaned and sanitized during this inspection.
  • Knives in rear kitchen area are being stored in a wooden scabbard which is not a readily cleanable storage container. (Knives would become contaminated inside)
  • Commercially processed refrigerated, ready to eat, time/temperature control for safety food, located in the walk in cooler, and held more than 24 hours, is not being marked with the date it was opened. Deli meats were date marked during this inspection.
  • Refrigerated ready to eat, time/temperature control for safety food,(sausage) prepared in the food facility and held for more than 24 hours, located in the reach in refrigerator in the rear kitchen, is not being date marked. Product was date marked during this inspection.
  • Metal shelving racks in walk in cooler are beginning to rust, no longer easily cleanable. Plastic coated shelving in the walk in cooler is chipping and deteriorating, no longer easily cleanable.
  • No sign or poster posted at the hand wash sink in the kitchen prep and service areas to remind food employees to wash their hands. Signs provided.
  • Mops are not being hung to air dry. Mops were correctly stored during this inspection.
