Pink mold-like slime inside ice machine, Lodge at Split Rock blows state restaurant inspection

The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on November 5, 2019. As a result of that inspection, and due to the severity of the specific violations The Lodge at Split Rock in Lake Harmony was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 8 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Microwave oven, a food contact surface, was observed to have food residue and was not clean to sight and touch. Microwave was cleaned and sanitized during this inspection.
  • Pink mold-like slime forming around outside of cover inside ice machine bin. Ice machine was cleaned and sanitized during this inspection.
  • Commercially processed refrigerated, ready to eat, time/temperature control for safety food, located in the true cold hold unit, and held more than 24 hours, is not being marked with the date it was opened. Food was marked correctly during this inspection.
  • Increased monitoring and oversight by the person-in-charge is necessary due to the number of risk factor items noted during review.
  • Ice cream in the walk in freezer area stored open with no covering. Ice cream was covered during this inspection.
  • Potato salad in the walk in cooler area stored open with no covering. Food was covered during this inspection.
  • Food employees observed in kitchen prep area, not wearing proper hair restraints, such as nets or hats.
  • Food facility does not have available sanitizer test strips or test kit to determine appropriate temperature to sanitize dishware.
  • Plumbing system not maintained in good repair – observed faucets in men’s and ladies rooms in need of repair.
  • Women’s toilet room is not provided with a covered waste receptacle for sanitary napkins.
