The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted a retail food inspection  last Friday with the inspector finding some 15 violations of food safety regulations resulting in the Department of Agriculture finding the restaurant,  “out of compliance” at Cousins Pizza and Deli in Bushkill last week, February 22, 2019.

Google Users reviewing the restaurant online give the Bushkill eatery 3.9 stars of 5 stars with some 75 people having reviewed the restaurant online.

Cousins Pizza and Deli was cited with 4 violations for each of the last two annual inspections in March 2017 and 2018. However in neither inspection was the restaurant found to be, “out of compliance.”

In the visit last week the inspector made the following comments:

  • Food Employee observed changing tasks that may have contaminated hands/gloves without a proper handwash in-between. Corrected on site
  • Food Employee observed donning single use gloves without a prior hand wash. Corrected on site
  • Thermometers for ensuring proper temperatures of food are not available or readily accessible
  • The deli hand wash sink being used to empty dripping, raw and cooked, from opened packaged of meat products. Bag is left in the sink. Corrected on site
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection
  • Observed wiping cloth in extremely unclean condition on the prep table in the back prep area. The towel was placed in a hamper
  • Food Facility has a certified food employee, but a certified food employee was not available during all hours of operation, as evidenced by an inability to talk with the certified food employee during this inspection
  • Food employees observed in the deli area, not wearing proper hair restraints, such as nets or hats
  • Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in the deli cases and black refrigerator in the back prep area
  • Food facility does not have available QAC sanitizer test strips or test kit to determine appropriate sanitizer concentration
  • Old food residue on knives stored behind prep tables in the back prep area behind the pizza area. The knives were placed at the sink for cleaning. Old food residue in a bowl on a pan covered with a grease and food residue coated towel on the shelves in the back prep area. The bowl and pan were placed at the sink for cleaning
  • Working containers in the dish wash area, used for storing *chemicals, cleaners* taken from bulk supplies, were not marked with the common name of the chemical. The container was labeled
  • Observed in-use knives stored between table edges or between tables, an area not easily cleanable & sanitized, in the back prep area
  • One drain stopper missing for the equipment sink
  • Old food residue on the front and inside the Avanti refrigerator on the prep table shelf in the back prep area
  • Floor tiles broken and missing in the deli and pizza areas
