The Pennsylvania Department of Agriculture’s Bureau of Food Safety and Laboratory Services conducted an unannounced retail food inspection on November 27, 2019. As a result of that inspection, and due to the severity of the specific violations Allessio’s Pizza and Grill in Gap was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 10 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • The Person-in-Charge is not performing the duties as required by the PA Food Code to actively manage food safety in this non-compliant facility.
  • Exposed food preparation observed under dirty ventilation ducts in the sandwich prep areas, and subject to potential contamination.
  • Facility not using sanitizer after washing and rinsing utensils in the three compartment sink.
  • Food facility does not have available chlorine sanitizer test strips or test kit to determine appropriate sanitizer concentration.
  • The food facility does not have the original certificate for the certified food employee posted in public view.
  • The food facility does not maintain Food Employee Certification records as required.
  • Commercially processed refrigerated, ready to eat(deli meat), time/temperature control for safety food, located in the walk-in cooler, and held more than 24 hours, is not being marked with the date it was opened/sliced. Corrected
  • Rear service door of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.
  • Food employee observed in prep area, not wearing proper hair restraints, such as nets or hats.
  • Observed wet wiping cloths, not being stored in sanitizer solution.
