12 violations- Lancaster’s Best China Wok fouls inspection; “Pipes leaking unto boxes containing food in the walk-in freezer. Food to be discarded”

The City of Lancaster conducted an unannounced retail food inspection on 3/16/2020. As a result of that inspection, and due to the severity of the specific violations the China Wok in Lancaster was cited as being, “Out of Compliance” with Pennsylvania’s food safety regulations. During this inspection a total of 12 violations were found.

The inspector made the following comments in support of the violations found during the inspection:

  • Observed pipes leaking unto boxes containing food in the walk-in freezer. Food to be discarded.
  • Observed food bins left uncovered in the food prep area with scoop handles buried beneath the surface. Repeat violation.
  • Grease spilled on surface around the grease collection bin is to be cleaned up. Repeat violation.
  • Food stored in all refrigeration units was open with no covering.
  • Observed deeply scored cutting boards not resurfaced or discarded as required.
  • All non-food contact surfaces are not cleaned at a frequency to preclude accumulation of dirt and grease. All non-food contact surfaces are to be cleaned. Repeat violation.
  • Front door to the outside, located in the seating area of the food facility is being propped open. Repeat violation.
  • Screen on back door located in the food prep area of the food facility is torn and does not protect against the entry of insects, rodents, and other animals. Repeat violation.
  • Food was held at 55 °F, in the food prep area, rather than 135°F or above as required.*
  • Outdoor storage area for waste is dirty and may create a potential insect or rodent hazard for the food facility.
  • Paper towel dispenser empty at the hand wash sink in the food prep area.
  • The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
  • Food employees observed in food area performing active food prep, not wearing proper hair restraints, such as nets, hats, or beard covers. Repeat violation.
  • Outside trash dumpster lid was left open.

* The temperature danger zone is food temperatures between 41 and 135 degrees Fahrenheit and the most rapid bacteria growth occurs between 70 and 125 degrees Fahrenheit. The longer food sits in this temperature range, the greater the risk that bacteria will begin to grow on food.
